The one honey I keep in my kitchen (and why it's not the bear-shaped kind)

Most of us grew up thinking honey was honey. The squeeze bottle in the pantry, the bear on the shelf, the packet next to the tea at a diner. It all tasted sweet, so what was the difference? For years I didn't think about it either. Then I started looking at what actually survives the trip through your stomach, and Manuka honey became the one jar I keep on hand at all times.

Here's the difference. Most honey is mostly sugar with a little antioxidant value. Manuka honey, which comes from bees that pollinate the Manuka bush in New Zealand, carries a compound called MGO (methylglyoxal). MGO is what gives Manuka its clinically studied antibacterial activity, and unlike a lot of "healthy" ingredients, that activity can survive stomach acid and saliva instead of breaking down on the way in. That's why Manuka is the honey you'll see used in medical settings for wound care. It's a different category of food.

Why I reach for it
